Preparing the summer’s harvest

We  have been busy this week drying tomatoes, pears and herbs from the garden- with all the unrest within the government and financial community we decided that we would at least try and make sure we were semi-prepared for food prices rising further by preserving as much as we can to use this winter.  It is quite amazing to see what 10lbs of cherry tomatoes becomes after drying- they fit nicely in a quart size freezer bag,  2 lbs of small pears also fit well in a quart size bag!  It is the first year for the pear tree to bear fruit so the harvest wasn’t as great as it should be next year.  I’m hoping the apple trees and the plum trees will bear as well next year.

The herbs will be hung to dry or placed in the dehydrater to dry and then placed in metal coffee cans that I have been saving over the past few years to store dry items.  I am still wondering when they started making coffee “cans” out of re-enforced cardboard?  Easy to recycle- yes;  however harder to use at home for things.

We will hopefully be planting beans and radishes as well as a few other things this week so that we will have a good fall harvest.  I think we are going to try and use row covers this year and try growing spinach, turnips cabbage and a few other wintery type items.

Well, that is what’s going on this week, looking to see what happens this coming week.
